30 Minute Meal

I am pretty proud of last night's dinner so I am sharing it with you.

Start to finish it was done in 30 minutes!

Simply = garlic mashed potatoes and Italian herbed chicken.


I knew the potatoes would take the longest, so I started them first. I used two large and three small red potatoes although I probably could have have just used two small ones as we have lots of left overs.
I cut off any sketchy parts and scrubbed them clean. I then used my handy dandy Pampered Chef rice cooker with about 1/2 cup of water and stuck them in the microwave for 15 minutes.

Grill chicken on high in a pan with olive oil and Italian herbs for about 15 mintues, covered, flipping about ever 5 minutes. Turn heat to medium and allow to cook for another 15 minutes. This is incredibly easy but makes the yummiest grilled chicken ever.

Once the potatoes are soft, mash with salt, pepper, about 2 tablespoons to butter, Italian seasoning and garlic powder to taste. They probably would have tasted even better with fresh chopped garlic --- I'll keep that in mind for next time.

Probably should have done a side salad or a side veggie... Oh well....

Super easy, fairly healthy 30 minute meal.

And followed by a lovely cup of tea.....
