SLC Farmers Market





Like we do often in the summer, every summer, this weekend we went to the SLC Farmers Market. I love knowing that everything is, fresh, organic and local! I have seriously considered moving downtown just so I can be in walking distance of the Farmers Market.


Keep up with what merchant are there and what is in season via their website. Make sure you get there early! Better parking, not as hot and the best produce will sell out! We got there waaayyyy later then I wanted and lots of things were sold out.


It is always such a treat to visit the Farmers Market and we always come home with unique and fresh ingredients!



We bought some yummy Gyros for lunch, 3 summer squash for $1, a loaf of sun dried tomato bread from out favorite bakery; 




And some coconut cream syrup. Yum. After buying the syrup we knew we had to hit up Pirate O's for macadamia nut pancake mix. Yeah. 




We also came across an artist who paints classic art and adds a odd out of place element, like this;




Love it! 


While at Pirate O's, we were happy to find all cheeses were 30% off, so Dave picked up some of his beloved Queso Manchego, imported from Spain.




We also bought a bag of Lemon Spinach. There was a lady handing out samples, and at first it just tasted like normal Spinach but as you chewed it there was a burst of lemon flavor, not too much, but very unique and yummy. I am very excited to make some salads with it! 


On Sunday we made dinner for the family. I really really love cooking for and entertaining groups. I can't wait till we have our own house and can have big dinner parties! I love everything about it!


On Sunday I made my favorite summer avocado salad. This (I believe) was the very first recipe I ever found and made from Pinterest and it is a favorite that I make often and have for the past 1.5 yeas +






I have blogged about it before, but if you haven't made it, you should. It is super easy;


What you need;
1 pint grape tomatoes
1 ripe avocado
2 ears of fresh sweet corn (I just use canned corn. Lazy!)
2 tbsp fresh cilantro


Slice the tomatoes in half. Dice the avocado and chop the cilantro.


Honey Lime Dressing


Juice of 1 lime
3 tbsp vegetable oil
1 tbsp honey
Sea salt and fresh cracked pepper, to taste
1 clove garlic, minced
Dash of cayenne pepper


Add all the dressing ingredients in a small bowl and whisk to combine. Set aside.
Combine the sliced tomatoes, avocado, cilantro and grilled corn and honey lime dressing and mix gently so everything is evenly coated. Be careful not to mash the avocados. Let the salad sit to let flavors mingle. The longer the better. 
The original recipe has it served as just a salad, being eaten with a fork, but we serve it with chips, eating it like a chunky salsa.


We also made this very yummy coconut curry chicken that made back on the 4th of July




We made this once before, but we cooked the sauce with the chicken and it ended up boiling it rather then grilling it. 


This time Dave grilled it up, and I made a little extra sauce and added rice to go with it. Yum!  This is a super easy dish, the only thing you need is patience for it to marinade and cook!  


I also made another summer favorite, strawberry fluff stuff. My MarthStewartofanAunt, Aunt Rachelle makes this a lot, and it soooo easy and a definite crowd pleaser. All you need is cottage cheese, whip cream, strawberry jello (unprepared) and fruit; strawberries, raspberries, blueberries, whatever. I usually just make it with only strawberries, but I added some raspberries this time too since I didn't have very many strawberries. This stuff is a crazy easy, a throw together and stir side dish and never lasts long in this house. I made it around the 4th of July and it was devoured in just a few hours. You could also easily change it up by using different jello flavors and fruits.


And finally, my latest and greatest recipe find, coconut macarons. These are a family favorite right now and I make them all the time. There are insanely easy, and a dream to eat.

Again, this recipe is crazy easy. I can't tell you how many times I have made these and I have never had a batch come out bad! Which is pretty impressive.
