A Healthy Tasty Treat

So a couple weeks ago Dave bought this magazine;




And I am usually opposed to buying any magazines. I feel like you spend $5-$10 for something that is 90% ads. I am all about just finding things online, particularly cooking and decor things. But Dave bought this magazine, and so I was thinking, what an awesome waste of money, but is actually jam packed with great easy recipes! I have tried two so far. First was some curried chicken wraps. They did not turn out great and tasted very mayo-y and super salty. I will have to tweak the recipe before I am happy with it, but it has great potential! 


Last night I made Berry Pudding Cakes. These were sooooo easy. So easy! And simple ingredients, I hate when recipes have off the wall ingredients I would never ever have in the house. There were quick and painless to whip up and were delicious topped with vanilla ice cream, very Berry Cobbler-esque. 






The cups we had are deeper, so the batter made 4, rather than 6 and I left them in the oven for 5 extra minutes, but here is the recipe;


Berry Pudding Cakes


2 eggs 
1/4 cups sugar
1 teaspoon vanilla
Dash of salt
1 cup milk
1/2 cup flour
1/2 teaspoon baking powder
3 cups fresh berries
2 teaspoons powdered sugar (optional)


Preheat oven to 400. Lightly coat each dish with cooking spray and arrange in baking pan; set aside.


In a medium bowl, combine eggs, sugar, vanilla and salt. Whisk until frothy. Whisk in milk until combined. Add flour and baking powder; whisk until smooth.


Divide berries among dishes. Pour batter over berries. Bake about 20 minutes or until golden brown and puffed. Serve warm. Sprinkle with Powdered sugar or top with vanilla ice cream (or both).




I used frozen berries and allowed them to just defrost before baking. No big deal. So easy and yummy. I will defiantly be making these again.
