I have been watching a lot of Food Channel and other cooking shows, Barefoot Contessa, American Baking Competition, and Diners, Drive-Ins and Dives. I was watching an episode of DDD with Christina and they were checking out an Italian restaurant in Tennessee where they had Cantaloupe Italian Ice. For the life of me I really couldn't find a good recipe. So here is what I came up with, with the help of my Mom (huge thanks Mom!)
1 half large cantaloupe
1/2 cup half and half (or heavy cream)
1/2 cup milk
Remove the seeds from the cantaloupe, and peel and chop. Throw it in the blender and puree. No chunks! Add remaining ingredients and blend well.
We threw that into our Cuisinart Ice Cream Maker it was done in about 45 minutes. It melted down really quick, but was really yummy! The batch did not last long, but it was so easy to make. If you want something yummy, light and easy, make this.
If you don't have an ice cream maker, I don't know what to tell you. You could probably add ice to the blender and just make a smoothie out of it, that's what I would do. If you are in the market for a ice cream maker, I would get the Cuisinart Ice Cream maker. They are so great and so easy to use! Seriously, buy one, now.
