Texas Pete Salad


One of our favorite summer dishes is Texas Pete Salad. Dave actually came up with this recipe, a twist on a pizza his mom makes (one of my all time favorite pizzas!) I thought I had posted the recipe for the pizza as well, but I am not seeing it, I will share that as well soon! It's so good!

This salad is super easy and super versatile. You can add tons of veggies, whatever you like really.

We like;
Lettuce (obviously)
Tomatoes
Peppers
Red onions
Mushrooms
Green onion
Avocado
Bacon
Corn
Black beans

For the chicken, I just sautee chopped chicken over medium high heat, and once it's almost fully cooked, coat it all in Texas Pete Buffalo sauce. Make sure to buy the buffalo wing sauce, not the hot sauce, so it's not too hot! I like to let my chicken cool before topping it on the salad, so this is when I start prepping all my veggies. Once I have everything chopped up the chicken is cool enough, add everything together for your salad, and top it with a little more Texas Pete Buffalo and we also toss it with a homemade creamy cilantro dressing.

For the dressing;
1 packet of Ranch
1 cup of milk
1 cup of sour cream or mayo
1 bunch cilantro
1 jalapeno (optional)

Add everything to a blender and chill until ready to serve! So easy! I love having a bottle of this dressing in the fridge. It only lasts about a week, but I will put it on anything and everything!

That's it! It's one of my favorite meals that is ready in under 30 minutes and is so flavorful!

Cowboy Caviar

I got this recipe from my sweet Aunt. She made it for me once and I think I ate half the bowl all by myself. This stuff is amazing! Colorful, flavorful and fresh, and easy to whip up in a big batch to share! Perfect for summer BBQ's and picnics! 


Here's what you need


1 can black-eyed peas (drain and rinse)
1 can black beans (drain and rinse)
1 can corn (drain only and rinse)
1 cans Rotel tomatoes
1/2 cup chopped cilantro
4-5 chopped green onions
1 chopped fresh tomato
1 chopped green bell pepper
1, 16 oz bottle Wishbone Robusto Italian Dressing (
you will only need half the bottle, about 1 cup)
Garlic powder to taste

Mix all ingredients together in a large bowl and stir in dressing. Allow to sit 4-24 hours before serving. It's better if you make it ahead and let it sit and absorb all the flavors overnight for maximum flavor. Serve by it's self or with tortilla chips.

DC Flea

This past week and weekend have been so much fun. I have mixed feelings with VA. The traffic is horrendous. Always. The people, to be totally honest, just are not as nice as they are in UT, or on the West Coast in general from what I hear. And I really do miss the mountains. And being able to go camping, or just going outside in general without being terrified of ticks. But all that aside, it is quite pretty here, there is so much history, and there are a lot of fun flea markets, a lot more farmers markets, antique stores and adorable pubs with yummy food.

On Saturday I went out with my parents to the DC Flea. It was so much fun! I bought way too much awesome stuff, but all for a killer deal.

I bought this cute ring. It's a little big on me so I will probably get a chain for it and wear it as a necklace. 


Once I loose enough weight (hopefully) I'll buy an ornate one, like this one.

I also bought a darling red basket, only $10! We used it the very next day. I am so happy with it. I might paint it white, or light blue, I can't decide!


I also bought this adorable white, craved wooden frame and this funny octopus postcard. 


And finally a croquette set!


We also went over to another antique store where I saw this cute globe. I want to try and DIY this! A Blog post soon to come on that, hopefully!


For lunch mom and dad took me to a British Pub, Hunter's Head Tavern. The food was so yummy, all fresh, local and organic. The house that the restaurant is in was originally built in 1750. The building still retains its original log cabin walls, fireplaces, mantels, floors on the upper stories, and even the original house well in the basement. The only change to the house has been the addition of the small kitchen at the back of the original building.

I wasn't too hungry, and still planned on going out with Dave once he got off from work, so I just got a small salad with chicken. 


It was Oh. My. Goodness. So. Tasty! I cleaned my plate! Spotless  I never do that. But seriously, so yummy.

I also got to try their bread that my mom always raves on about. 



So good. Flaky on the outside, incredibly soft on the inside. Words cannot describe how wonderful this bread is. If you are ever even remotely in the area, go there just to try the bread.

We then shared their warm chocolate chip bread pudding, topped with whipped cream and a bourbon sauce. 



So yummy! I have never had bourbon (surprise) but the sauce had an almost cinnamon flavor to it, which paired with the rich warm chocolate chips was perfection. 

Also, a lady at the Flea Market told me she loved my dress and thought I looked adorable. Fall is in the air and I am loving it! Fall is easily my favorite. Bring on the layered outfits, boots, sweaters and scarves!




 My lace dress and boots are from Target. So in love with them.

Texas Pete


We eat really well at our house.
Dave is a good experimental cook and makes us lots of yummy food and I bake and make us oober fat.
My favorite dish from him is the Texas Pete salad.
His family lives off of Texas Pete but I had never really had it, or heard of it till his mom made buffalo chicken pizza, which I now crave, pretty much every single day.


For the pizza, I use Krusteaz wheat dough bread mix. You can use the white, but I think the wheat is a lot better to work with and I never get those dumb bubbles that you can get on pizza's when baking. You just pour a good amount of the Texas Pete buffalo sauce. I think it's spicy but I like a good amount on the pizza. It's totally up to you. I smother it in mozzarella, because I like it extra cheesy. Dave's mom does a mix of cheeses when she makes it. I also add some bacon bits, if you want it extra spicy; Dave's family add's green chilies. I bake it at 375 for about 10-15 minutes. Also, we enjoy it dipped in some cilantro ranch dressing.

Dave took a twist on this yummy pizza, trying to be a little healthier he made a salad with our favorite Texas Pete. Just an easy salad, lettuce, cilantro, tomatoes, with corn, beans, sour cream, and guacamole, and of course, the cilantro ranch, and he just grills the chicken with the Texas Pete and that is a for sure fave too! And not so carby!

Texas Pete can be hard to find! Smiths almost always has it, but I don't think Walmart ever does so keep that in mind if you plan to make your own Texas Pete dish.
