{Vegan} Spicy Thai Curry Stew

I combined a few different recipes to end up with this. It was super easy to throw together, and can be made in a crockpot, or just on the stove. I It's a great way to pack in lots of veggies, and enjoy lots of flavor! It's vegan too! This recipe did have quite the kick to it, which my husband loved. But you could leave out the serrano peppers, and it would still be very yummy.

What you will need;

1 large onion, sliced
4 garlic cloves, peeled and minced
3-4 large potatoes, cut into large pieces
3-4 carrots, peeled and cut
1 can diced tomatoes
2 serrano peppers, seeded and diced*
2 teaspoons ground ginger
1/2 teaspoon chili powder
2 tablespoons red curry paste, or curry powder
32 oz low sodium vegetable broth
1 can coconut milk
Salt and pepper to taste
Limes and chopped cilantro to garnish (optional)

If making on stove top;

Sautee onions and garlic in a bit of water (to prevent sticking) over medium-high heat, 3-5 minutes. Add potatoes, carrots, ginger, chili powder, and curry (paste or powder). Stir together, coating the veggies with the curry as much as possible. Add tomatoes, serrano peppers, broth and coconut milk. Bring to a boil. Reduce heat, cover, and simmer for 25 minutes, or until potatoes are soft. Serve garnished with lime juice and chopped cilantro.

If making in crock pot;

Add onions, garlic, potatoes, carrots, ginger, chili powder, and curry (paste or powder) with 1-2 tablespoons of water. Stir together, coating the veggies with the curry as much as possible. Add tomatoes, serrano peppers, broth and coconut milk. Cook on low for 7-8 hours, or high for 4, or until potatoes are soft. Serve garnished with lime juice and chopped cilantro.

*For me, the serrano peppers were very hot! Maybe that's because they had been sitting in my fridge all week, I'm not sure. I would advise to only use one, or skip them entirely if you don't like the heat.

Wildflower's Fresh Veggie Omelette - Under 300 Calories

I've become slightly obsessed with omelettes as of late. I eat them for breakfast, lunch, dinner. They are so quick and easy to whip up, flavorful and healthy! Here is one of my favorite omelette's as of late.

What you will need;

1 large mushroom washed and chopped
Handful of fresh spinach
2 tablespoons pico de gallo
3 tablespoons cheese of your choice
3 egg whites
1 teaspoon olive oil
Salt and pepper to taste

Chop mushroom and place with spinach in a small pan. Drizzle with olive oil.

Saute on medium heat till spinach is wilted

Turn off the heat and remove veggies from pan and set aside.

Next, add the egg whites to the pan and cook on low heat. I buy the egg whites in the carton which is pretty cheap and lasts a while so I don't have to waste any yolks. Follow the directions on the carton to know how much to use. I use about 3 tablespoons.

The pan should still have enough oil left over from sauteing the veggies, but add more if it doesn't look oiled to prevent any sticking.

Most people recommend flipping the egg to ensure both sides are fully cooked. I hate dealing with flipping it, so I put a lid on it and this cooks both sides nicely. Easy!

After about 1 and 1/2 minutes add the cheese, salt and pepper, and cover again, cooking for another 1 and 1/2 to 2 minutes or until cheese is melted.

Add veggies,

Fold and serve!

Enjoy!

Clean Eating Challange

So Dave has made all these internet friends over the past month who have been giving him health and fitness tips. After our trip to North Carolina (post on that coming soon!) we felt so UGH after all the yummy but unhealthy eating.

One friend Dave has met started a 5 Day Clean Eating Challenge that we joined in on. I have decided not to post about it here but will be talking about it on Instagram but mostly on Tumblr, so feel free to follow along there! We are on Day 1 and it's going great so far! Loving it!

Happy Monday!!

2014 Goals

Happy New Years my friends!

I hope you all had some fun New Years Eve celebrations, big or small.

I know, I technically already did a post about resolutions but I am sharing a little more on this years resolutions. I love hearing what other people hope for the new year, what are your goals?

Read at least one book a month
(preferably two)

One of my goals last year was to publish a book - obviously that didn't come to fruition, and I really did try to write, but I just had no good inspiration. But I realized that during times when I did feel inspired, I was reading lots of books, sometimes three at a time, but I can't think of a single book I read last year! Hopefully reading more consistently will help get the creative juices flowing.

Eat clean

I was doing really well with this off and on this year. And now that the Holidays are over I am ready to get my butt back into gear! Nothing beats how I feel when I am eating clean!
 It is worth every penny.

Go somewhere new at least once a month

We currently live close to so many awesome and history rich places and I am kicking myself for not getting out and seeing much - something that has been holding us back is car issues - right now we are on the fence of getting a new car, or running our current one into the ground. I also stress about traffic and dealing with parking in unknown places.... Regardless of what we decide, I need to let go of my anxiety and just get out!

Figure out my own style

I don't really fee like I have my own style. I wear what is comfortable.
And some days I care to look nice and some days I don't.
I just want a wardrobe that has more outfits rather then some cute cloths,
some church clothes and lots of sloppy comfortable clothes.
Who says you can't be cute and comfortable at the same time?

Actually print pictures and do something with them

I take SO many pictures and they just sit online and on hard drives so I really want to be more proactive about doing things with them! I have some pretty sweet ideas in mind....

Start going back through old years of my blog and printing it into books

Did you know this blog has been around since 2008? We recently house sat for someone and she was incredibly organized and had a shelf of books printed directly from her blog. Such a great way to keep the hard copies! Especially since in more recent years I blog more then I journal so having physical copies would be wise for record keeping. Sometimes nothing beats going through a physical book of photos.

Don't procrastinate and be more organized

I don't necessarily procrastinate because I am lazy. I put things off because I just get anxiety from dealing with normal adult chores. And then I find I have this huge to-do list that gives me even more anxiety. I just need to put on my big girl panties and take care of business.

Well that's all for now. Here's to an awesome 2014! Happy New Year!

A Little Update

I had been really sick for nearly 3 weeks. 3 weeks! Ugh. I finally made a visit to the doctor who told me that it didn't sound too serious but that my stomach may have had too much stomach acid which was making my stomach raw. So he gave me something to take twice a day to lower the levels of stomach acid. Immediately it helped! I am so glad that it was such an easy fix and nothing more serious. So grateful for modern medicine!

The other day Dave and I took my ring for a check up and get cleaned. Can I tell you what a pain it was just to find Jared! We had never been in that area before, and the dumb navigation app kept having us take u-turns and couldn't figure out how to get us there. There was a point where I actually said, "Just forget it, let's go home!" But, after trying a different app (thanks for being No Help, Waze!) we finally got there.

The lady at Jared asked where we got the ring, because she had never seen the design before. I am glad to know my ring is unique, even to someone who works at Jared.

I have a lot of friends who have upgraded or added on to their wedding rings after only being married a short time. And that's fine, but I've had this ring running on four years now and I haven't had one day where I am sick of it. I love my ring. Sure, I would like to do a custom add-on to it, but I am still perfectly happy with it.

After they cleaned it and confirmed I had no loose stones we went to find a place for lunch. Directly across from Jared we found a Jason's Deli! I literally squealed.

Dave said, "I have never heard you make that noise, over anything." I was seriously excited. I had no idea Jason's Deli was in VA, I thought they were just on the West Coast. Happy day!

enjoying lunch

After a yummy lunch we visited our favorite, World Market. Ugh, I LOVE that place.

Darling little pop-up cards they had. All sold out though! Heart break!

I WILL be going back to buy these darling, nesting owl measuring cups!

If you have never treated yourself with a trip to World Market, go, and bring at least $50, if not $100. And make sure to buy a bottle of the Georgia Peach sparkling soda. You're welcome.

Happy Friday!
